Butter Chicken Masala

800g chicken, cubed
2 onions, finely sliced
4 garlic cloves
2 tbsp ginger paste
400g crushed tomatoes
200ml cream
2 tbsp butter + 2 tbsp oil
2 tsp garam masala, 1 tsp cumin, 1 tsp coriander, ½ tsp turmeric, chili to taste
Cook onions in butter and oil over medium heat for 25 minutes until deep golden. Add garlic, ginger, and spices; cook 2 minutes.
Add tomatoes and cook until oil separates. Add chicken and cook through. Stir in cream and simmer 10 minutes. Finish with a knob of butter and fresh coriander.
