2 heads romaine lettuce
Dressing: 4 anchovy fillets, 2 garlic cloves, 2 egg yolks, 2 tbsp lemon juice, 1 tsp Worcestershire, ½ cup olive oil, 50g parmesan
Croutons: sourdough bread, olive oil, garlic
Pound anchovies and garlic to a paste. Whisk in egg yolks, lemon, Worcestershire. Slowly drizzle in olive oil to emulsify. Stir in parmesan.
Toss romaine with dressing. Top with croutons (made by tossing bread cubes in garlic oil and baking until golden) and extra parmesan.
