100g feta cheese
½ cup kalamata olives
2 tbsp hummus
Lemon tahini dressing
Cook quinoa according to package instructions. Let cool slightly.
Arrange quinoa in bowls and top with cucumber, cherry tomatoes, feta, and olives. Add a dollop of hummus and drizzle generously with lemon tahini dressing.
