Roasted Tomato Bisque

1.5kg plum tomatoes, halved
1 head garlic
2 onions, quartered
4 tbsp olive oil
500ml vegetable stock
150ml cream
Fresh basil
Roast tomatoes, garlic, and onions with olive oil at 200°C for 35 minutes until caramelized and deeply fragrant.
Blend with stock until very smooth. Pass through a sieve. Reheat with cream, season generously. Serve with a drizzle of good olive oil and sourdough croutons.
