600g beef mince (80/20 fat ratio)
Salt and pepper
4 brioche buns
Special sauce: mayo, ketchup, mustard, pickle relish
Toppings: lettuce, tomato, caramelized onions, cheese
Form meat into 150g patties. Do not overwork — just press together. Season generously on both sides.
Cook on a very hot flat griddle or cast iron pan 3-4 minutes per side. Add cheese in final minute. Toast buns. Build burger with sauce on both buns, then layer toppings. Serve immediately.
